Milkie Way Malt



Ingredients

* 2 1/2 cups vanilla bean ice cream
* 1/3 cup whole milk
* 1 tablespoon malted milk powder
* 1 tablespoon milk chocolate chips
* 1 tablespoon caramel sauce plus additional for drizzling
* Chocolate syrup
* Malted milk balls, coarsely crushed




Directions

Place two 8-ounce glasses in freezerto chill. Combine first 4 ingredients and 1 tablespoon caramel sauce in blender; process on high speed until thick and smooth, about 30 seconds.

Squirt chocolate syrup and caramel sauce into both glasses; split malt mixture between glasses. Top with malted milk balls

Warm Basil Gnocchi Salad with Carpaccio of Tomatoes


Ingredients
* 2/3 cup extra-virgin olive oil
* 5 tablespoons fresh lemon juice
* Gray salt and freshly ground black pepper
* 2 1/2 pounds vine-ripened tomatoes, preferably a mixture of red, yellow, orange and variegated
* 10 handfuls salad greens
* 1/2 recipe Gnocchi, recipe follows
* About 3 1/2 ounces ricotta salata cheese or Parmesan


Directions
1. In a medium or large bowl, whisk together the olive oil, lemon juice, and salt and pepper to taste. Taste for balance and adjust with olive oil or lemon as necessary. Using a mandoline or sharp chef's knife, slice the tomatoes as thinly as possible and arrange on a large platter. Season with salt and pepper and spoon a little of the vinaigrette over the tomatoes. Toss the lettuce with a little more of the dressing and arrange on top of the tomatoes.
2. When the gnocchi has drained, place in the bowl with the remaining vinaigrette. Toss gently, then scatter the gnocchi on the salad. Using a vegetable peeler, shave the cheese over the salad and serve immediately.

For the gnocchi:
- 2 pounds russet potatoes
- Coarse salt
- 4 egg yolks
- 1/2 cup freshly grated Parmesan
- 1/2 teaspoon salt
- Pinch freshly ground black pepper
- Pinch freshly grated nutmeg
- 1 to 1 1/4 cups unbleached all-purpose flour, plus more for dusting or use store bought gnocchi (1 pound fresh or frozen)

1. Preheat oven to 375 degrees F.
2. Bake potatoes until very soft on a bed of coarse salt in a baking dish, about 45 minutes. (The salt keeps the potatoes from touching the dish and developing a hard spot.) Cool potatoes until warm, then halve lengthwise and scoop out the flesh. Pass the flesh through a food mill or ricer, or push it through a coarse sieve. You should have about 4 cups.
3. In a bowl, combine potato, egg yolks, Parmesan, salt, pepper, and nutmeg. Work the mixture with a wooden spoon until smooth. Add 1 cup of the flour and knead very gently, patting and pressing the dough with your hands until all the flour is incorporated. Add some or all of the additional 1/4 cup flour if the dough feels too moist, it should be soft but shouldn't stick to your hands. Transfer dough to a work surface and roll into a log about 3 inches in diameter. Cut the log into 8 equal pieces.
4. Give each piece a quarter-turn so that you are rolling the dough in a different direction, then roll into ropes, a generous 1/2-inch in diameter, as if making breadsticks. Flour the ropes generously, and then cut crosswise at 1/2-inch intervals. You can shape the gnocchi on a ridged butter paddle or on the back of a fork, or you can cook them as is. Let them dry at room temperature for at least 20 minutes before cooking
5. Bring a large pot of water to a boil and add salt. Add the gnocchi and cook for about 90 seconds from the time they rise to the surface. Remove with a skimmer, drain well.

Cook's Note:
- Although you need only a half batch of gnocchi for this recipe, take the time to make a whole batch, freeze half, and reap the rewards of your effort later.
- A carpaccio is paper thin slices of a food such as tomatoes that can turn a simple supper into an elegant meal

Pizza Pockets



Ingredients
* 1 tablespoon olive oil
* 8 ounces Italian turkey sausage
* 1 cup tightly-packed arugula (about 1 ounce)
* 4 ounces cream cheese, room temperature
* 1/3 cup grated Parmesan, plus 1/4 cup
* 1/2 teaspoon salt
* 1/4 teaspoon freshly ground black pepper
* 1 (13.5-ounce) package of store-bought pizza crust (recommended: Pillsbury)
* All-purpose flour, for rolling out pizza dough
* 1 egg, beaten (for egg wash)
* 1 1/2 cups marinara sauce, store-bought or homemade
Directions
Heat the olive oil over medium-high heat in a medium-sized, heavy skillet. Add the sausage and cook until crumbled and golden, about 5 minutes. Add the arugula and cook until wilted. Turn off the heat and let cool about 10 minutes. Add the cream cheese, 1/3 cup Parmesan, salt, and pepper and stir to combine. Set aside.

Preheat the oven to 400 degrees F. Roll out the pizza dough on a lightly floured surface to a thin 20 by 12-inch rectangle. Cut the rectangle in half lengthwise. The cut each half into 8 equal rectangles.

Spoon topping onto 1 side of each of the rectangles. Using a pastry brush, brush the edges of the rectangle with egg wash. Close the rectangle of pizza dough over the topping. Use a fork to seal and crimp the edges. Place the pizza pockets onto a parchment paper-lined baking sheet. Brush the top of each pizza pocket with egg wash. Sprinkle with the remaining Parmesan. Bake until golden, about 15 to 17 minutes.

Meanwhile, heat the marinara sauce over low heat in a medium saucepan. Serve the hot pizza pockets with the marinara sauce alongside for dipping

Curry Pork Burgers with Spicy Ketchup



Ingredients

* 2 1/2 pounds ground pork
* 2 teaspoons ground coriander
* 2 teaspoons curry powder
* 2 teaspoons Worcestershire sauce
* 1 teaspoon cayenne pepper
* 3 scallions, chopped
* 2 large clove garlic, finely chopped
* Salt and freshly ground black pepper
* 2 tablespoons olive oil
* 6 hamburger buns
* 1 head butter lettuce
* 2 to 3 tomatoes, sliced
* Spicy Ketchup, recipe follows



Directions

In a large bowl, using your hands mix together pork, coriander, curry powder, Worcestershire, cayenne, scallions and garlic, seasoning well with salt and pepper. Make 6 even patties and put in refrigerator until ready to cook. Heat a large fry pan over medium-high heat, add oil. Sear patties until golden brown on both sides and cooked through, about 5 minutes per side. Cook in batches, if necessary. Serve inside hamburger buns topped with lettuce leaf, tomato slice and spicy ketchup.
Spicy Ketchup:

* 1 clove garlic, minced
* 1 tablespoon butter
* 1 cup ketchup
* 1/2 teaspoon red pepper flakes
* 1/4 teaspoon cayenne pepper
* 1 scallion, finely chopped

In a saucepan over medium heat, lightly saute garlic in butter, about 2 minutes. Add ketchup, red pepper flakes and cayenne pepper. Cook another 5 minutes. Remove from heat and stir in scallions. Cool before serving.

Salmon with Lemon, Capers, and Rosemary



Ingredients

* 4 (6-ounce) salmon fillets
* 1/4 cup extra-virgin olive oil
* 1/2 teaspoon salt
* 1/2 teaspoon freshly ground black pepper
* 1 tablespoon minced fresh rosemary leaves
* 8 lemon slices (about 2 lemons)
* 1/4 cup lemon juice (about 1 lemon)
* 1/2 cup Marsala wine (or white wine)
* 4 teaspoons capers
* 4 pieces of aluminum foil
Directions

1. Brush top and bottom of salmon fillets with olive oil and season with salt, pepper, and rosemary. Place each piece of seasoned salmon on a piece of foil large enough to fold over and seal. Top the each piece of salmon with 2 lemon slices, 1 tablespoon of lemon juice, 2 tablespoons of wine, and 1 teaspoon of capers. Wrap up salmon tightly in the foil packets.
2. Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Place the foil packets on the hot grill and cook for 10 minutes for a 1-inch thick piece of salmon. Serve in the foil packets.

Marinated Grilled Cherry Tomatoes Skewers



Ingredients

* 1/4 cup olive oil
* 3 tablespoons balsamic vinegar
* 3 cloves garlic, finely chopped and made into garlic paste
* 1 tablespoon finely chopped fresh thyme leaves
* 24 cherry tomatoes
* 8 to 10 wooden (6-inch) skewers, soaked in water for 30 minutes
* Salt and freshly ground black pepper
* 2 tablespoons finely chopped fresh chives
Directions

Whisk together the oil, vinegar, garlic paste and thyme in a medium bowl, add the tomatoes and toss to coat. Let tomatoes sit at room temperature for 30 minutes to marinate.

Heat the grill to high.

Remove the tomatoes from the marinade and skewer 4 per skewer, depending on the size of the tomatoes). Season on both sides with salt and pepper and grill until golden brown and slightly charred on both sides, about 6 minutes. Transfer the skewers to a platter and garnish with chives.

Mango Blueberry "Fool"




Ingredients

* 1 (1-pound) ripe mango, pitted, peeled, and cut into chunks
* 1/4 cup sugar, or to taste
* 2 tablespoon fresh lime juice, or to taste
* 1 cup chilled heavy cream
* 1 1/2 cups blueberries (1/2 pound)
* Grated lime zest to taste
Directions

Pur?e mango, sugar, lime juice, and a pinch of salt in a blender until very smooth. Add cream and blend until very thick. Blend in additional lime juice and sugar to taste.

Transfer to a bowl and fold in most of blueberries, then divide among 6 glasses. Top with remaining blueberries and zest. If desired, chill, loosely covered, 30 minutes.

Mexican Hot Cocoa



Ingredients


* 2 cups reduced-fat (2 percent) evaporated milk
* 1/2 cup whole milk
* 1/2 cup chocolate liqueur
* 1 teaspoon vanilla extract
* 1/4 cup sugar
* 1 tablespoon unsweetened cocoa
* 1 1/2 teaspoons ground cinnamon
* 1/4 teaspoon ancho chili powder
* 10 cinnamon sticks
* 1 dried red chile
* 2 1/2 ounces bittersweet chocolate, broken into pieces
* 1/4 cup heavy whipping cream
Directions


Whisk evaporated milk, whole milk, liqueur, vanilla, sugar, cocoa, 1 teaspoon of cinnamon and chili powder in a heavy saucepan. Add 2 of the cinnamon sticks and chile and cook gently over medium-low heat until warm. Add chocolate and cook, whisking until melted. Gently bring to a high simmer; reduce heat and simmer until liquid thickens and reduces slightly, whisking often, 10 minutes. Combine heavy cream with remaining 1/2 teaspoon cinnamon and beat until peaks form. Ladle 1/3 cup hot cocoa into each of 8 teacups; top with 1 tablespoon whipped cream and garnish with a cinnamon stick.

Watermelonade



Ingredients


* 1 (12-pound) watermelon (preferably seedless)
* 1/4 cup sugar, divided
* 4 teaspoon fresh lemon juice, divided
* 16 cups ice cubes, divided


Garnish:

* lemon slices; mint sprigs
Directions


Cut watermelon flesh into 2-inch chunks and discard rind. Pur?e one fourth of watermelon in a blender with 1 Tbsp sugar, 1 tsp lemon juice, 4 cups ice, and a pinch of salt. Strain through a fine-mesh sieve into a large bowl, discarding solids. Make 3 more batches. Add sugar to taste if desired and serve over ice.

Cooks' note: Watermelonade can be made 1 day ahead and chilled, covered. Drink will separate; re-blend before serving.

Bloody Carioca




Ingredients


* 8 to 10 ice cubes
* 1/4 cup (2 ounces) cachaca
* 1/2 cup (4 ounces) tomato juice
* 1 tablespoon (1/2 ounce) passion fruit juice
* 1 tablespoon (1/2 ounce) lemon juice
* 1/2 teaspoon lime juice
* 1/8 teaspoon freshly ground black pepper
* 1/8 teaspoon ground celery salt
* 1/8 teaspoon ground nutmeg
* 1/8 teaspoon sea salt
* 1/4 teaspoon hot sauce, such as Tabasco
* 1/4 teaspoon Worcestershire sauce
* 1 stick cucumber (about 7 inches long and 1/4 inch thick)
* 2 green olives
Directions


In cocktail shaker, stir together ice, cachaca, tomato juice, passion fruit juice, lemon juice, lime juice, pepper, celery salt, nutmeg, and salt. Add hot sauce and Worcestershire sauces, then stir for five seconds. Pour into highball glass. Thread olives on toothpick, then add olives and cucumber stick to drink and serve immediately.
